Sodium acetate process Sodium acetate concentration measurement Sodium acetate, sodium ethanoate NaO2C2H3, also known as anhydrous salt or trihydrate, is obtained from the reaction of sodium hydroxide or sodium carbonate with acetic acid. Vaisala Polaris™ Process Refractometer is used to measure continuously the concentration of the final product after water has been added. The in-line refractometer signals are used to control the addition of water so that the final sodium acetate concentration is at approximately 7% b.w.
